Feebee’s Flu Shot

Boost your immune system this Autumn & Winter with a delicious Elderberry & Rosehip Syrup, or what I like to call Feebee’s Flu Shot.

Ingredients

4 cups water

1/2 cup dried elderberries

1/2 cup dried rosehips

2 small cinnamon sticks

1 inch fresh ginger (peeled and sliced)

250ml honey

6 cloves

1 tablespoon lemon juice

Method

In a pan bring the water to the boil.  Gently add in the elderberries and rosehips (give them a little squish before adding them to the pan). 

Bring the pan back down to a gentle simmer and add the cinnamon, ginger, cloves and lemon juice.  Continue simmering for at least 40 minutes, allowing the ingredients to infuse, reduce and in the case of the elderberries – become safe for consumption.

Allow to cool slightly and using a fine sieve or muslin cloth, separate the liquid from the mixture.   Compost the remnants of the berries, cinnamon etc, as you only need the liquid. Add honey to the warm liquid, stirring well until its fully melted. 

Store in a bottle, in the fridge and enjoy about 1tbsp each day to help you and your family stay well this Autumn & Winter.
